Domaine Sylvain Mosnier Chablis Premier Cru "Beauroy" 2019

This Chablis Premier Cru “Beauroy” is a very expressive wine, with a bitter finish giving a beautiful balance and generosity.

VARIETY: 100% Chardonnay

TERROIR: Kimmeridgian : Limestone soil, alternating layers of very compact limestone and very soft clayey marls containing fossilized marine organisms (tiny oysters, called Exogyra virgula).

VINIFICATION / AGING : Mechanical harvest. pneumatic pressing and descent of the juices by gravity into thermo-regulated enamel or stainless steel vats. It is then aged on fine lees.
